Lamb Merguez Pita with Feta and Mint

Stuff your pita pockets with Brooklyn Cured Lamb Merguez for a flavor packed sandwich!

Ingredients

  • 1 package Brooklyn Cured Lamb Merguez, 9 oz.

  • ⅓ cup Feta Cheese

  • 1 cup Hummus

  • ½ cup Roasted Red Peppers, sliced into long thin strips

  • ½ English Cucumber, peeled and sliced into half moons

  • ¼ cup Red Onion, sliced thinly

  • ½ cup fresh Mint, torn

  • ½ cup fresh Parsley, chopped

  • 4 pieces Pita Bread

  • 1 Lemon, halved

Directions

  1. Cook the sausages on the grill or in an oiled pan set over medium heat until browned on both sides, about 5-7 minutes per side.
  2. Remove the sausages to a cutting board and allow them to rest 2-3 minutes before slicing on a bias into half-inch pieces.
  3. Meanwhile, arrange the pita on plates. Spread 3-4 tablespoons of hummus down the center of each pita. Top with each of the other ingredients, including the sausage divided equally among all 4 pitas.
  4. Finish with a squeeze of fresh lemon juice.
