Pasta with Black Truffle Sausage and Kale

Black Truffle Sausage elevates a quick weeknight pasta dish in this recipe. Get fancy and bring some black truffle to your dinner table.

Ingredients

  • 10 oz. package Brooklyn Cured Black Truffle Sausage, sliced into coins

  • 2 tablespoons Olive Oil, plus more for drizzling

  • 2 Garlic Cloves, minced

  • 1 bunch Kale, cut into small pieces

  • 16 oz. Rigatoni or other wide pasta

  • 1 cup of Parmesan or Pecorino Romano Cheese

  • 1 Lemon, halved

Directions

  1. Boil pot of heavily salted water and cook pasta until just al dente.
  2. Heat olive oil in a saute pan and add garlic when hot.
  3. Cook garlic just until fragrant, then add sliced Black Truffle Sausage and cook until browned, about 5-8 minutes.
  4. Drain pasta and reserve a cup of pasta water. Add pasta to pan with Black Truffle Sausage and add ½ cup of pasta water.
  5. Stir in kale and ½ cup of cheese until kale begins to wilt.
  6. If dish seems dry, add more pasta water ¼ cup at a time.
  7. Stir in remaining cheese and squeeze lemon juice.
  8. Drizzle with olive oil and top with more cheese. Enjoy!
