Bourbon & Sour Cherries Dipping Oil

The Bourbon & Sour Cherries salami brings a sweet, smoky depth that plays perfectly against the briny olives and bright citrus. Manchego is a natural fit here, but any semi-hard cheese with a little sharpness works well. This topping also doubles as a killer charcuterie board component — just set it out in a bowl with bread alongside.

Ingredients

  • 5 oz. Brooklyn Cured Bourbon & Sour Cherries salami chub, sliced into half-moons

  • 4 oz. semi-hard cheese (such as Manchego or Asiago), cut into small cubes

  • 1/2 cup pitted green olives, roughly chopped

  • 1/4 cup blanched almonds, roughly chopped

  • 3 tablespoons good olive oil

  • Juice and zest of 1 lemon

  • Juice and zest of 1/2 orange

  • Cracked black pepper, to taste

  • Crusty bread or crostini, for serving

Directions

  1. Combine the salami, cheese cubes, green olives, and almonds in a medium bowl.
  2. Add the olive oil, lemon juice and zest, and orange juice and zest. Toss everything together until well coated.
  3. Season generously with cracked black pepper. Taste and adjust citrus or oil as needed.
  4. Let the mixture sit for 5 minutes to let the flavors come together.
  5. Spoon generously over toasted crusty bread or crostini and serve immediately
